The Monte Nevado Mangalica is still bred in the savannahs of Hungary. It can reach double the age of a regular pig and can get as heavy as 150kg.
Afterwards it's meat is relocated to Monte Nevado in the Spanish region of Salamanca because of it's ideal climate.
The Monte Nevado hams are of superior quality partially because of the slow integration of fat which means that the meat is eligible for a long and slow ageing process taking over 24 months
